The picture below is how I set up my 7U. The spacer is from the Hyster D4N manual to give clearance for the controls. It did not require any changes in plumbing for the spacer or setting the seat in the far back holes for the seat tank.
I am 5'16" tall and I have enough room for my feet to run the brakes fairly easily. No reason that you couldn't add additional holes or a higher spacer for more room, but that will require some plumbing changes for the fuel system.

yes its fairly easy to make up the hard lines any engineering shop or hose n fittings joint should be able to make them up for you. remember these old girls are maximum 1200psi hyd pressure. what can be easier is to get sae100r2 dash 12 (3/4)hose and run that 100r2 is the hose for most field fit reusable fittings.
if you make them yourself out of tube remember they need to be welded single pass so you have a leak proof joint
