My (limited) experience is that if the discs are doing there job and not worn the adjustment shown should give you the brake you need to engage the pinion. The only pinion adjustment I can think of from the outside without replacing parts or rebuilding it are with the latch screws. This does not seem to be your issue.
I had mine apart (clutch and pinion) in 2020 and have some photos I will look for. As info, I did not replace my clutch discs with that project. I did review Squatch's videos on Youtube and attempted to concave the discs with no success, so I put them back flat and have no issues with the engagement of the system. If you take it out, I used a PTO Universal spline shaft to hold in place on the vice to keep it from moving and to not damage anything. Again, this is for my D42T-not sure if your 8T is the same. I looked for a parts book on it and was unable to find one to compare.
